Two things that I always have on hand are sourdough starter and ripe bananas, ready to use. This is a perfect combination, just begging to be combined in waffle form. They are so easy to make from scratch and will be your new weekend favorite. Watch out pancakes!

How to make these easy banana sourdough starter waffles
I have tried a ton of waffle recipes over the years. Finally I’ve landed o a version that is so delicious and unbelievably light. Truly restaurant quality.
Whisk all the dry ingredients together in a large bowl. Then into the dry ingredients, add the plant-based milk, sourdough starter, mashed banana, oil and vanilla extract. My favorite plant-based milk is homemade cashew, but you can use any you prefer.
Mix the batter until a smooth and thick consistency. Try not to overmix, this will cause the gluten in the flour to develop and leave you with chewy and flat waffles.
Then pour the batter into your preheated waffle maker. I have a “flip style” waffle maker and found that by immediately flipping after closing the lid allows them to become even fluffier. They will still be fluffy if you don’t have this option.
Let them cook about 4-5 minutes until golden brown. Best to serve immediately, but you could also wait until all of them are ready and quickly warm in the microwave if needed.
This recipe comes together really quickly. There is no need to let it sit overnight like many sourdough recipes. Within 30 minutes your family could be sitting down to a waffle breakfast

Banana Waffles with Sourdough Starter – Vegan
Ingredients
- 1 cup all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 1/3 cup sourdough starter
- 3/4 cup plant-based milk
- 1/3 cup mashed banana
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla
Instructions
- Preheat the waffle iron.
- In a large bowl, add the flour, baking powder, salt and sugar. Mix to combine.
- Then add the plant-based milk, sourdough starter, oil, banana and vanilla. Stir to until it is just combined, do not over-mix.
- Make waffles in waffle iron. Top with sliced bananas and maple syrup.
